Bang Bang Shrimp Broccoli


1lb frozen shrimp (I buy tailed, deveined, and shelled)

2lbs broccoli (chopped into florets)

1/2 cup creamy peanut butter at room temperature

2 tbsp sesame oil

2 tbsp soy sauce

6 tbsp water

2 tbsp sriracha

1/2 tsp ground ginger


Prep and steam broccoli. Mix together peanut butter, soy sauce, water, sirracha, and ground ginger. Add sesame oil to a pan on medium heat, add shrimp, then add the peanut butter mixture. Coat the shrimp evenly, add the steamed broccoli florets, and cook until the shrimp is pink. Serve over a bed of veggie noodles, quinoa, or brown rice. Yum yum!
