Buffalo Chicken Salad

Stressing about what to have for lunch? Save this recipe for an easy brown-bag lunch. This is one heckuva sandwich filling-spicy, tangy and full of protein packed chicken breast. Save time by using leftover chicken or store-bought rotisserie chicken. Yummmmm…..:)

Buffalo Chicken Salad Sandwich

Ingredients:

2 chicken breasts cooked and shredded

2 stalks celery, chopped

2 tbsp butter, melted

1/2 tsp garlic powder

1/2 tsp paprika

1/2 lemon, juiced

salt and pepper, to taste

8 slices whole wheat bread

Directions:

Combine chicken, celery and onion in a large bowl. In a separate bowl combine all other ingredients. Add wet ingredients to chicken and mix well.

Serve on bread or celery.
