Inside Out Lasagna

This is perfect for a cool winter evening or any time you need something to stick to your ribs or feed a big crew! I call it inside out lasagna because it has the noodles on the inside and meat on the outside. Backwards…you know. It takes about 20 minutes to assemble and then 45-55 mins to to cook through. Here you go!


3 package of ground turkey (I get mine at Costco)

1 cup of salsa

1 cup of Panko crumbs (or normal bread crumbs)

2 eggs

8 lasagna noodles

1 – 500ml cottage cheese

3/4 cup pasta sauce

Havarti cheese for the topping (I like jalapeno Havarti for some extra kick)

4 tsp basil

salt and pepper to taste


Heat water in a big pot and boil lasagna noodles until they’re cooked through. While noodles are cooking, mix ground turkey, panic crumbs, eggs, basil, salsa, and salt and pepper in a mixing bowl. Don’t over mix or it’ll get mushy. And no one likes mushy 🙂

Add an egg to the cottage cheese with 2 tsp basil and mix together.

Line a large roasting pan with parchment paper and trim edges. Place 3/4 of the meat mixture in the bottom and using a spoon line half way up the sides. Place a layer of noodles over the bottom of the pan, cover with the cottage cheese mixture, noodles, and then top with remaining turkey mixture.

Spread the tomato sauce on top and cook in the oven at 375*F for 45 mins. Remove after 45mins, add the cheese to the top, and broil for 5 mins or so. Keep your eye on it!
