Paleo Maple Chocolate Protein Cupcakes

I seriously make these almost every week and never get tired of them! They’re moist, chocolatey, and won’t break the bank on your macros! Winner!


1-19oz can black beans

5 eggs

1 tsp vanilla extract

1 tsp baking powder

1/2 tsp baking soda

4 TBSP coconut oil

1/2 cup maple syrup

1/4 cup chocolate protein powder

2 TBSP cacao powder


In a food processor, mix all the ingredients together until smooth. Scrape down the sides if necessary. Pour into lined or sprayed muffins tins and bake for 20-25 minutes at 350*F until tooth pick comes out clean. Let cool for 5 minutes then place on a rack. And hide a few for yourself – they won’t last long! 🙂
