Protein Coconut Bounty Bars

Bit of a back story on these bad boys! My uncle LOVES bounty bars, but let’s face it – Bounty bars don’t always love us back! So, I thought I’d come up with a solution where he could have his Bounty and enjoy it  too! If you’re hooked on coconut and chocolate, you’ll love these! 🙂

Ingredients

1 cup shredded unsweetened coconut

1-2 scoops vanilla protein powder

6 tbsp coconut flour

1/4 cup sweetener of choice (I used honey)

1/4 cup liquid coconut oil

1/4 cup milk of choice (I used soy milk)

1 cup stevia chocolate chips (you can pick these up at a health food store)

Directions

Mix the shredded coconut, coconut flour, and protein powder together. Make a small well in the centre and add the coconut oil, honey, and milk. Miix together until blended then roll into balls, place on parchment paper, and freeze for an hour. Meanwhile, melt the chocolate in a double boiler and when the balls are frozen, with a tooth pick dip each ball in the chocolate and place on parchment paper to cool (makes 19)
