Sweet Potato Truffles

With the holiday season upon us, here’s a great way to get your fix without regretting it later! With their chocolatey outside and PB and sweet potato insides, these Sweet Potato Truffles are a total hit!


4 tbsp dark chocolate chips

2 tbsp coconut flour

1 scoop vanilla protein powder

1 tbsp maple syrup

1 tbsp orange juice

1 tsp orange zest

1 tbsp PB2 or peanut butter

1 cup sweet potatoes mashed


Mix all ingredients except chocolate chips until well combined. You should have a consistency that is firm enough to roll into a ball.

Scoop a tablespoon of the “dough” to create your truffle balls and place in the freezer for 10-15 minutes to firm up. Meanwhile, melt your chocolate chips in a double boiler or microwave. Using a tooth pick, dip your truffle in the chocolate and place on a piece of parchment paper to set. Place all the truffles in the fridge to set. Store in an air tight container in the fridge or wrap them up in a pretty bow and give them to your neighbour! Merry Christmas! Ho, ho, ho…
