Vanilla Cinnamon Protein French Toast

These are perfect on weekends or on Christmas morning!


3/4 cup almond milk

1 Tbsp chia seeds

2 tsp vanilla extract

1/2 tsp cinnamon

1/2 tsp ginger

1/4 tsp nutmeg

1/4 tsp cardamom

1 serving vanilla protein powder

4 slices gluten free (sprouted grain) bread

2 tbsp maple syrup (topping)

1/2 cup strawberries (sliced)


Measure almond milk into a liquid measuring cup and add the chia seeds, vanilla, cinnamon, ginger, nutmeg, and cardamom.

Stir and allow to sit for 10-15 minutes until the chia seeds absorb the liquid.

Transfer to a blender and add the protein powder.

Pour the mixture into a shallow baking dish. Soak the bread slices on both sides until well saturated. While the bread soaks, heat a skillet to medium and spray with cooking oil.

Cook on both sides until browned. Serve with maple syrup and chopped strawberries. (makes 2 servings)
